My go-to breakfast skillet for the days when I need simplicity.

Today I'm going to share with you a recipe for a simple four ingredient breakfast skillet that is super easy and delicious. It has sausage, sweet potatoes, spinach and cajun seasoning, and it's perfect for a cozy morning meal.

I came up with this recipe for my roommate who was on very strict diet restrictions. Gluten free, dairy free, egg free, low sulfite, high protein, and whole food, this easy skillet is great for almost anyone.

Four Ingredient Breakfast Skillet

Here's What You Need:

  • 1 pound of ground turkey or chicken sausage

  • 2 medium sweet potatoes, diced (or one large)

  • 2 cups of baby spinach

  • 2 teaspoons of cajun seasoning

  • Salt and pepper to taste

Here's What You Do:

  1. In a large skillet over medium-high heat, cook the sausage, breaking it up with a spatula, until browned and cooked through, about 15 minutes. Drain the excess fat and transfer the sausage to a plate.

  2. In the same skillet, add the sweet potatoes and 1/4 cup of water. Cover and cook, stirring occasionally, until the potatoes are tender, about 20 minutes. Add more water if needed to prevent sticking.

  3. Sprinkle the cajun seasoning over the potatoes and toss to coat. Add the spinach and cook, stirring, until wilted, about 5 minutes.

  4. Return the sausage to the skillet and stir to combine. Season with salt and pepper to taste.

  5. Enjoy your simple four ingredient breakfast skillet!
